Nutritional yeast is lower in calories and adds a cheesy flavor.

Start with a heavy bottom saucepan.

Add water, butter, and salt; bring to a boil until butter is melted.

Add flour and stir with a wooden spoon until it forms a dough that pulls away from the sides.

Add eggs one at a time, stirring after each addition until fully incorporated.

Stir in gruyere cheese until melted and well incorporated.

Transfer the dough into a pastry bag.

Pipe out rounds about the size of a quarter onto a baking sheet.

Lightly tap each round with a spoon dipped in water to smooth the edges.

Sprinkle thyme leaves on top and add flor de sel salt.

Freeze the tray overnight or for about 4 hours.

When ready to bake, bake for 10 to 12 minutes until golden brown.
