Gougeres

Cultural Context

Gougeres are a classic French pastry made from choux dough combined with cheese. They are often served as an appetizer or snack and are popular at celebrations and gatherings. Their light, airy texture and cheesy flavor make them a favorite in French cuisine, often enjoyed with wine or as part of a larger meal.

🥗Healthier: nutritional yeast

💰Cheaper: processed cheese

Nutritional yeast is lower in calories and adds a cheesy flavor.

1

Chop the smoked bacon into strips.

2

Place the chopped bacon into a cold pan to cook until crispy.

3

Remove the cooked bacon from the pan and place it on a paper towel-lined plate, leaving the bacon fat in the pan.

4

Measure out 4 oz of bacon fat; if there is not enough, add butter to make up the difference.

5

In a saucepan, combine 1 cup of water, the bacon fat, and butter, and turn the heat to high.

6

Add 1 teaspoon of salt and 1 teaspoon of cracked black pepper to the mixture.

7

Bring the mixture to a boil.

8

Once boiling, add 1 cup of flour and cook for about 60 seconds until a film forms on the bottom of the pan.

9

Crack 5 large eggs into a bowl to avoid shell pieces, then add them to the pastry dough one at a time, mixing well after each addition.

10

Add 1 cup of grated Gruyere cheese, the minced scallions, and the cooked bacon to the dough and mix until combined.

11

Preheat the oven to 400°F (425°F for non-convection ovens).

12

Scoop the dough onto a parchment-lined sheet pan using a small ice cream scoop.

13

Bake in the preheated oven for 20 to 25 minutes until golden brown.
