Gougeres

Cultural Context

Gougeres are a classic French pastry made from choux dough combined with cheese. They are often served as an appetizer or snack and are popular at celebrations and gatherings. Their light, airy texture and cheesy flavor make them a favorite in French cuisine, often enjoyed with wine or as part of a larger meal.

🥗Healthier: nutritional yeast

💰Cheaper: processed cheese

Nutritional yeast is lower in calories and adds a cheesy flavor.

1

Preheat the oven to 425°F.

2

In a saucepan, melt 1 stick of butter with 1 cup of milk and 1 teaspoon of salt.

3

Add 2 tablespoons of store-bought pesto to the mixture.

4

Once melted, stir in 1 cup of flour until fully combined and cooked off the raw flour flavor.

5

Transfer the dough to a mixing bowl and let it cool slightly.

6

Add the eggs one at a time, mixing well after each addition to incorporate air.

7

After the last egg, add 1 teaspoon of pepper and mix until thick.

8

Fold in 4 oz of grated Parmesan cheese, reserving a little for topping.

9

Spoon or pipe the dough onto a baking sheet lined with parchment paper.

10

Sprinkle reserved cheese on top of the dough.

11

Bake at 425°F for 12 minutes, then lower the temperature to 350°F and bake for an additional 12 to 15 minutes.

12

Remove from the oven and poke a hole in the side of each gougere to release trapped air.
