Girl's Brunch-Marinated Olives, Baked Feta, and Aperol Mimosas

- ●2 cups mixed olives (green and black)

Instructions
- 1In a medium bowl, combine the mixed olives, minced garlic, chopped rosemary, chopped thyme, and red pepper flakes.
- 2In a separate small bowl, whisk together the olive oil, lemon zest, red wine vinegar, and salt.
- 3Pour the olive oil mixture over the olives and herbs, stirring to combine well.
- 4Cover the bowl with plastic wrap or transfer the mixture to a jar with a lid.
- 5Refrigerate for at least 2 hours, preferably overnight, to allow the flavors to meld.
- 6Before serving, bring the olives to room temperature for the best flavor.
- 7Serve as an appetizer or snack, garnished with additional herbs if desired.
