Ingredients

  • 2 cups mixed olives (green and black)
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon red pepper flakes
  • 1 tablespoon lemon zest
  • 1 tablespoon red wine vinegar
  • Salt to taste

Instructions

  1. 1In a medium bowl, combine the mixed olives, minced garlic, chopped rosemary, chopped thyme, and red pepper flakes.
  2. 2In a separate small bowl, whisk together the olive oil, lemon zest, red wine vinegar, and salt.
  3. 3Pour the olive oil mixture over the olives and herbs, stirring to combine well.
  4. 4Cover the bowl with plastic wrap or transfer the mixture to a jar with a lid.
  5. 5Refrigerate for at least 2 hours, preferably overnight, to allow the flavors to meld.
  6. 6Before serving, bring the olives to room temperature for the best flavor.
