Put all the ingredients in a bowl: white wine and water.

Add dried herbs: thyme, basil or oregano, bay leaves, whole peppercorns, mustard seeds, fennel, and coriander.

Add olive oil and olives (rinsed and without brine).

Add the whole hot chili (or break it and remove seeds for less spiciness).

Cut the washed lemon into quarter-inch slices and discard the ends.

Add the lemon slices to the olives and mix well.

Clean the roasted bell pepper, cut it in half, and remove any burnt skin.

Mix the bell pepper with the other ingredients in the bowl.

Transfer the mixture to a sterilized jar and push the ingredients down.

Seal the jar well and keep it in a cool place away from light for three to five days, turning the jar every day.

After five days, serve the olives, optionally cutting the lemon slices before serving.
