Ingredients

  • 1 cup jasmine rice
  • 2 cups water
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (14 oz) diced tomatoes
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1/2 tsp cayenne pepper
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh cilantro, chopped (for garnish)

Instructions

  1. 1Rinse the jasmine rice under cold water until the water runs clear.
  2. 2In a medium saucepan, combine the rinsed rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the rice is tender and water is absorbed.
  3. 3While the rice is cooking, heat olive oil in a large skillet over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  4. 4Add the minced garlic to the skillet and sauté for an additional minute until fragrant.
  5. 5Stir in the smoked paprika, ground cumin, cayenne pepper, salt, and black pepper. Cook for 1 minute to toast the spices.
  6. 6Add the drained chickpeas and diced tomatoes (with their juices) to the skillet. Stir well to combine.
  7. 7Bring the mixture to a simmer and cook for about 10 minutes, allowing the flavors to meld and the sauce to thicken slightly.
  8. 8Once the rice is cooked, fluff it with a fork and divide it among serving plates.
  9. 9Spoon the spicy and smoky chickpea mixture over the jasmine rice.
  10. 10Garnish with fresh cilantro before serving.
