unsalted butter

Mix flour, sugar, and salt in a bowl.
Dissolve yeast in warm milk and let sit until frothy, about 5 minutes.
Add yeast mixture, eggs, and vanilla to the flour mixture; mix until a dough forms.
Knead the dough on a floured surface for about 10 minutes until smooth.
Roll the dough into a rectangle and chill for 30 minutes.
Roll out the butter between two sheets of parchment paper into a rectangle.
Place the butter in the center of the dough rectangle and fold the dough over it.
Roll the dough out again into a larger rectangle, then fold into thirds like a letter.
Chill the dough for another 30 minutes; repeat the rolling and folding process two more times.
Roll the dough out to about 1/4 inch thick and cut into rectangles.
Place a piece of chocolate at one end of each rectangle and roll up tightly.
Place the rolled pastries on a baking sheet and let rise for 1 hour.
Preheat the oven to 400°F (200°C).
Brush the pastries with an egg wash before baking.
Bake for 15-20 minutes until golden brown.
Cool on a wire rack before serving.
