Tofu is plant-based and lower in calories, while thighs are more economical.

Chop the chicken breasts and season them with onion powder, garlic powder, black pepper, ginger, nutmeg and salt.

In a frying pan, fry the chicken until golden brown.

In a pot, reuse some of the chicken oil to cook the onion and tomato paste for 4 minutes over medium high heat.

Add the tomato and cook for another 4 minutes.

Add the chicken, the spinach and the water. Let cook for 5 minutes.

Add the peanut butter. Stir, adjust seasoning (if needed) garlic, nutmeg, salt…. Stir again, let cook for 5-10 minutes.

Stir, remove from stove and serve.
