Sweet potatoes add nutrients and flavor, while frozen options save time.

Take very little water in a pan and add sugar to it.
Add finely chopped garlic and finely chopped lemongrass to the pan and mix until the sugar melts.
Add chili paste to the mixture and some chili flakes for extra flavor.
Lower the flame once the sugar is melted and squeeze in some lemon juice and salt to taste.
Boil the potato wedges in water for a few minutes until they are slightly soft but not fully cooked.
In a bowl, mix equal quantities of rice flour and corn flour, add sesame seeds, salt, and chili paste, and optionally some chili flakes and msg.
Add water to the flour mixture to make a thick batter.
Add the half-cooked potato wedges to the batter and mix until they are well coated.
Heat the fryer to 170°C and drop the battered potatoes into the oil.
Fry the potatoes for exactly nine minutes until they are perfectly done and crispy.
Remove the fried potatoes and transfer them onto a paper plate.
