Coarsely chop the spinach and set aside.
Chop onion and cilantro, then add to food processor.
In the food processor, combine walnuts, garlic, salt, and blend into a paste.
Add chopped spinach, onion, spices, and vinegar to the walnut paste in the food processor and blend until creamy.
Taste and adjust seasoning with salt and vinegar as needed.
Transfer mixture to a mixing bowl and chill in the refrigerator for at least 2 hours.
Garnish with pomegranate seeds before serving.
