Ingredients

  • 1 cup gyoza wrappers
  • 1/2 pound ground pork
  • 1/4 cup chopped green onions
  • 1/4 cup shredded cabbage
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 4 cups chicken broth
  • 1 tablespoon ginger, minced
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce (for soup)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. 1In a bowl, combine ground pork, green onions, cabbage, 1 tablespoon soy sauce, sesame oil, ginger, garlic, salt, and pepper. Mix well.
  2. 2Place a gyoza wrapper in your hand and add about 1 teaspoon of the filling in the center.
  3. 3Moisten the edges of the wrapper with water, fold it in half, and pinch to seal. Repeat with remaining wrappers and filling.
  4. 4In a large pot, bring the chicken broth to a boil.
  5. 5Add 1 tablespoon of soy sauce to the broth and stir.
  6. 6Carefully add the gyoza to the boiling broth.
  7. 7Reduce heat to a simmer and cook for about 5-7 minutes, or until the gyoza are cooked through.
  8. 8Taste the soup and adjust seasoning if necessary.
  9. 9Serve hot, garnished with additional green onions if desired.

Instructions

  1. 1In a small saucepan, heat the vegetable oil over medium heat until it shimmers.
  2. 2Add the minced garlic and Sichuan peppercorns (if using) to the hot oil and sauté for about 30 seconds until fragrant.
  3. 3Remove the saucepan from heat and let the oil cool slightly for a minute.
  4. 4In a heatproof bowl, combine the dried red chili flakes and salt.
  5. 5Pour the hot oil mixture over the chili flakes and salt, stirring to combine.
  6. 6Let the chili oil cool to room temperature.
  7. 7Once cooled, transfer the chili oil to a clean jar or bottle.
  8. 8Seal tightly and store in a cool, dark place for up to a month.
