In a large saucepan, combine 2.5 cups water and 8 to 10 tablespoons of white wine vinegar.
Add 0.5 cup of granulated sugar to the mixture.
Add 6 cloves, 1 cinnamon stick, and 4 cardamom pods to the saucepan.
Boil the mixture for 20 to 30 minutes or until the pumpkin is soft.
Transfer the pumpkin into jars, adding the spices from the saucepan.
If needed, make more brine and pour it over the pumpkin in the jars.
Seal the jars and refrigerate for a week before consuming.
