Select ripe tomatoes, about 4 oz in weight and 2.5 inches in diameter.
Rinse the tomatoes under cool running water to remove dirt.
Slice off the tops of the tomatoes and scoop out the pulpy seeds and core using a spoon.
Drain the juices from the tomatoes into a bowl and let them sit cut-side down on a paper towel for 5-10 minutes to reduce moisture.
To make the stuffing, combine minced garlic, chopped parsley, sliced basil, breadcrumbs, Parmesan cheese, salt, pepper, and olive oil in a bowl and mix until well combined.
Stuff the tomatoes with the filling, lightly packing it in, using about 3-4 tablespoons of stuffing per tomato.
Grease the bottom of a baking dish with olive oil to prevent sticking.
Place the stuffed tomatoes in the baking dish and drizzle with olive oil on top.
Bake in a preheated oven at 400°F until the tomatoes are soft and the skin starts to wrinkle, about 20-25 minutes.
