Grilled Artichokes with Lemon Aioli

Prepare the baby artichokes by cutting about an inch off the bottom of the stem.
Peel the stem to remove the hard, woody ends.
Remove the bottom leaves of the artichokes.
Cut the tips off each of the artichoke leaves to allow steam to penetrate.
Cut off the top of the artichokes to help them open up for steaming.
Steam the artichokes in a two-section steamer pot for about 20-30 minutes, placing them face down in the steamer.
Prepare the lemon aioli by mixing half a cup of mayonnaise with two tablespoons of lemon juice.
Mince two cloves of garlic and add to the mayonnaise mixture.
Season the aioli with salt and pepper to taste and whisk together.
Chop one tablespoon of parsley and mix it into the aioli for added flavor and color.
Light the grill and prepare it for direct grilling, using Fogo premium charcoal.
Spray the artichokes with duck fat spray and season with Wassi's Meat Market Vintage Sunshine Rub.
Oil the grill grates with a paper towel dipped in oil to prevent sticking.
Place the steamed artichokes on the hot grill face down for about one to two minutes to achieve grill marks.
Flip the artichokes over after one to two minutes to char the other side.
