Cut the feta cheese into about six to seven sticks.

Place the feta sticks onto a paper towel to absorb excess moisture.

Take one sheet of phyllo dough and fold it in half.

Cut each phyllo sheet in half lengthwise.

Place one stick of feta cheese onto the bottom of the phyllo sheet.

Begin rolling the phyllo around the feta, folding the sides in to secure it.

Brush the area where the phyllo meets with water to seal it.

Continue rolling and sealing until all feta is used, making about seven rolls.

Cover the rolls loosely with a clean kitchen towel to prevent drying out.

Heat light olive oil in a cast iron skillet to about 350 to 360°F (175 to 182°C).

Carefully add the feta parcels to the hot oil and fry for about 3 to 4 minutes, flipping halfway through.

Drain excess oil on a plate lined with paper towels.
