Vegan and Gluten Free Pizza

2 tbsp of chia seeds
6 tbsp of water
180g almond (or almond flour)
20g oat flakes (gluten free if you want)
½ teaspoon of sea salt
1 teaspoon of garlic powder
½ medium/large onion or 1 small onion
1 carrot
1 soup spoon of oregano
1 soup spoon of olive oil more q.b for sautéing
1 teaspoon of rice vinegar (or cider vinegar)
Sea salt to taste
Red pepper to taste
Olives to taste
Fresh basil leaves to taste
Rocket leaves to taste
125g silk tofu
2 teaspoons white miso
2 teaspoons nutritional yeast
1 teaspoon garlic powder
1 tbsp olive oil
pinch of sea salt if you think it's necessary.

Start by hydrating the chia seeds with the water and set aside for a few minutes so the seeds can absorb the water.

Grind the almonds until you get a fine and loose flour. Set aside.

Grind the oat flakes into a flour. Add all the ingredients and mix well until you have a mouldable dough.

Form a ball with the dough and roll out on greased baking paper with a little olive oil, until it is shaped like the base of a pizza.

Bake at 180º for about 8 to 10 minutes, or until golden brown.

Cut the onion in half-moons and place in a bowl and marinate with 1 tbsp of olive oil, 1 tbsp of oregano, a pinch of sea salt and 1 tbsp of vinegar. Stir well and leave to marinate for at least 15 minutes.

Finely grate the carrot and sauté in a frying pan with olive oil and a pinch of sea salt. If you want you can add the onion and sauté it together or, if you prefer a crunchier onion, just add it when you assemble the pizza.

Place all the cheese ingredients in a tall glass and blend with the help of a hand blender until you obtain a homogeneous cream.

Spread the base of the pizza with the cream cheese, reserving some for the top.

Place the sautéed carrot, then the onion and finish with your favourite toppings. I suggest olives, strips of red pepper and again a portion of cream cheese. Bake in the oven for about 10 minutes or until toasted.

At the end, put fresh basil and rocket leaves on top.
