Sous Vide Halibut with Soy Custard

1 lb halibut fillets
2 cups dashi broth
1 cup water
1 oz bonito flakes
2 tablespoons Sriracha soy sauce
1 teaspoon salt
2 tablespoons oil
2 tablespoons butter
1/2 cup bruno shallots
1 teaspoon white pepper
1 cup mushrooms
1 cup heavy cream
1/4 cup amontillado sherry
2 tablespoons lemon juice
1 cup spring vegetables

Prepare dashi broth by boiling equal parts water and bonito flakes, then strain.

Use Sriracha soy sauce in the recipe.

Prepare the sous vide water bath set to 70°C (158°F).
