Originating from the Cape of Good Hope in South Africa, Cape Malay Gaja reflects the rich culinary heritage of the Cape Malay community, known for its aromatic spices and flavorful dishes. Traditionally served during festive occasions, this dish showcases the blend of cultures and flavors that characterize Cape Malay cuisine. Today, Gaja is enjoyed by many, both locally and internationally, often adapted with various proteins and vegetables to suit different tastes.

In a bowl, combine 4 cups of cake flour and 1 teaspoon of salt.
Add 1 cup of lukewarm water to the flour mixture, then add another half cup as needed.
Use a fork to mix, then knead the dough with hands for 5 to 6 minutes until smooth.
Let the dough rest for 10 to 15 minutes, covered with flour.
Prepare some oil and softened butter in a bowl.
Cut the rested dough into balls of desired size.
Roll each dough ball out with a rolling pin, applying oil and butter as needed.
Sprinkle a tiny bit of baking powder on each rolled dough before folding.
Fold the dough to create layers and roll out again, ensuring it's thin.
Repeat the rolling and folding process for all dough balls, making about 12 medium-sized roti.
Refrigerate the rolled roti for about half an hour to firm up.
Heat a pan over high heat and roll out the roti into a square shape.
Fry the rolled roti in the heated pan until crispy and flaky, checking the color as it cooks.
