Cut half an onion.

Sauté onion in vegetable oil over medium-high heat.

Cut 2-3 potatoes into pieces 3 mm thick.

Add potatoes to the pan with the onion.

Add more oil if necessary and fry until the potatoes are tender, about 15 minutes, stirring every 5 minutes.

Mix 3 eggs in a bowl.

Cut half a tomato.

Flip the potatoes when they are browned underneath.

Chop the greens.

When the potatoes become soft, drain the oil.

Add the potatoes to the egg mixture and stir gently.

Cover and leave for 10 minutes.

Add tomatoes and greens to the mixture.

Season with salt and pepper.

Heat some vegetable oil in the pan over medium-high heat.

Fry for 2-3 minutes until golden brown from below.

Flip to the other side and fry for 2-3 minutes more.
