1

Divide the potatoes into halves and then into quarters, then slice them up.

2

Take a large frying pan and add enough olive oil to cover the potatoes.

3

Put the frying pan on low heat and add the onions and potatoes.

4

Poach the potatoes and onions in the oil for around 15 to 20 minutes, keeping the oil at a very low simmer.

5

Drain off all the oil and let the potatoes and onions cool off a little.

6

If there's excess oil, squeeze it out of the potatoes.

7

In a bowl, crack 4 eggs and whisk them well.

8

Mix the cooled potatoes and onions into the eggs and add salt and pepper to taste.

9

Pour the mixture into the frying pan over medium heat, stirring initially to start cooking.

10

Once the egg starts to set on the bottom, stop stirring and scrape down the edges of the tortilla to release it.

11

Cook for 5 to 10 minutes, depending on how dark you want it.

12

Flip the tortilla onto a plate and scoop it back into the frying pan to cook the other side for another 5 to 10 minutes.

13

Serve the tortilla warm, optionally with salad or fresh tomatoes.
