Chicken and Mushroom Soup

1 lb chicken breast, diced
8 oz mushrooms, sliced
1 medium onion, chopped
2 cloves garlic, minced
4 cups chicken broth
1 cup heavy cream
2 tbsp olive oil
1 tsp thyme
1/2 tsp salt
1/4 tsp black pepper
1/4 cup fresh parsley, chopped
