In a saucepan, reduce 1 cup of heavy cream by half.

Add 1/4 cup of red wine vinegar to the reduced cream.

Stir in 2 tablespoons of Dijon mustard.

Add 1/2 cup of finely chopped celery and 1 small chopped onion to the mixture.

Add 1/4 cup of flat leaf parsley to the bowl.

Season with salt and white pepper to taste.

Gently fold in 4 hard-boiled eggs that have been chopped into pieces.
