Pour diced potatoes into saucepan over medium heat, add salt, water and bring to a boil for 10-12 minutes, strain and set aside to cool off.

In a mixing bowl with the cooked potatoes, add red cabbage, green bell pepper, sweet corn, carrot, spring onion, scotch bonnet pepper, onion, and hard boiled eggs and set aside.

Scoop mayonnaise in a small mixing bowl, add garlic, lemon juice, salt, black pepper, stir and pour on the salad then mix together till evenly coated.

Creamy potato salad ready to serve.
