Hot & Creamy CAJUN PASTA Recipe

Boil the penne pasta according to package instructions until al dente, then reserve 1 cup of the pasta boiling water and drain the rest.

In a pan, heat the oil and butter over medium heat.

Add the diced red bell pepper, sliced mushrooms, chopped onion, chopped celery, and chopped capsicum to the pan. Sauté until softened.

Add the minced garlic and sauté for an additional minute.

Stir in the cream, tomato paste, lemon juice, and the reserved pasta water. Mix well to combine.

Add the cajun spices: paprika, garlic powder, onion powder, oregano, thyme, black pepper, and cayenne or chili powder. Stir to incorporate.

Add the cooked penne pasta to the sauce and mix until the pasta is well coated.

Stir in the grated cheddar or vegetarian parmesan and season with salt to taste.

Garnish with fresh parsley before serving.
