Heat olive oil in a pan until warm.
Add unpeeled garlic cloves to the oil and sauté on low flame until soft.
Chop half a cup of tomatoes and add to a mixing bowl.
Chop half a cup of bell peppers and add to the mixing bowl.
Chop half a cup of carrots and add to the mixing bowl.
Add one-third cup of sweet corn to the mixing bowl.
Chop one-third cup of coriander and add to the mixing bowl.
Chop 2-3 green chilies and add to the mixing bowl.
Slice 6-7 olives and add to the mixing bowl.
Add 1 teaspoon of black pepper powder, one-third teaspoon of salt, one-third teaspoon of chili flakes, and 1 teaspoon of Italian herbs to the mixing bowl.
Add 1 teaspoon of vinegar to the mixing bowl and mix all ingredients well.
Remove the sautéed garlic from the pan and chop or mash it before adding it to the vegetable mixture.
Mix the sautéed garlic into the vegetable mixture thoroughly.
Slice French bread diagonally into pieces.
Optionally, spread butter or olive oil on the bread slices.
Heat a pan and place the bread slices with the buttered side down.
Toast the bread on medium to low flame until golden and crispy, then flip to toast the other side.
Spread the vegetable mixture generously on the toasted bread slices.
Place the bruschetta in a pan on low flame to melt cheese on top, covering the pan with a lid.
Cook until the cheese melts, approximately 5-7 minutes.
Serve the bruschetta warm.
