Pour sushi rice into a large bowl and cover with water.

Agitate the rice to rinse off excess starch until the water is clear, then drain.

Add the rinsed rice to a pan with a 1:1 ratio of rice to water and bring to a boil with the lid on high heat.

In a separate pan on low heat, combine vinegar, salt, and sugar to make the seasoning liquid, warming until dissolved, then cool.
