Dice 500 grams of onions and 3 cloves of garlic.
Heat oil in a saucepan and add the diced garlic, cooking briefly to avoid bitterness.
Add 2/3 cup of brown sugar to the pan to caramelize.
Once caramelized, add 3 cans of diced tomatoes to the mixture.
Pour in 1 cup of apple cider vinegar and bring the mixture to a boil.
Prepare spices: measure out 1 teaspoon of salt, 1 teaspoon of ground ginger, 1 tablespoon of mustard seeds, 2 star anise, 1/2 teaspoon of cinnamon, 1 teaspoon of allspice, 1 teaspoon of black pepper, and 1 teaspoon of curry powder.
Add the spice mix to the boiling tomato sauce and stir well.
Cut sausages partially through, then fry them in a pan for about 30 minutes, turning occasionally.
While sausages are frying, strain the sauce through a sieve to remove solids.
Add 1 can of tomato paste to thicken the sauce, and if needed, add a second can.
Stir in 2 teaspoons of lemon juice and 1 tablespoon of Worcestershire sauce to the sauce.
Taste the sauce and adjust seasoning with more salt if necessary.
Allow the sauce to boil until thickened to a ketchup-like consistency.
Serve the fried sausages on a plate, pour the sauce over them, and sprinkle with additional curry powder.
Serve with fries on the side, optionally with mayonnaise.
