Preheat the oven to 375°F (190°C).
Melt 1/4 cup butter in a 12-inch cast iron pot over medium-low heat.
Add 1 sliced onion and cook for about 15 minutes until softened.
Add 1/2 head of shredded cabbage, 1/2 teaspoon salt, and 1/2 teaspoon black pepper; cover and steam for a few minutes until softened.
Break up 1 can of corned beef and mix it into the cabbage mixture; cook for an additional 3-5 minutes.
Layer 1/3 of the cabbage and corned beef mixture in the bottom of the pot.
Layer 1/3 of the thinly sliced potatoes on top of the cabbage mixture.
Sprinkle 1/3 of the grated gouda cheese over the potatoes.
Repeat the layering process until all ingredients are used, finishing with a layer of gouda cheese and 1/2 cup of Panko bread crumbs on top.
Beat 1 egg and mix it with 1.5 cups of heavy cream; pour this mixture over the top layer.
Bake in the preheated oven for 90 minutes until golden and bubbly.
