½ inch fresh Galangal, slice
1 inch Lemongrass steam, slice
½ Onion, slice
⅓ cup Coriander with roots, roughly chopped
2-3 Green chilli, roughly chopped
2-3 Kaffir lime leaves, roughly torn
Salt to taste
1 tbsp Oil
2 tbsp Prepared green thai curry paste
½ Green zucchini, slice
1 medium size Thai eggplant, slice
½ cup Broccoli, florets
⅓ cup Cauliflower, florets
2-3 Baby corn, cut diagonally
1 Red chilli, slice
1 cup Coconut milk
½ cup Water
½ tsp Sugar
5-10 Basil leaves

In a mortar pestle, add galangal, lemongrass steam, onion.

Add coriander roots, green chilli, kaffir lime leaves, and salt to taste and make a smooth paste of it.

Heat oil in a kadai or wok, add prepared green thai curry paste.

Saute on medium flame for five minutes.

Add coconut milk and saute it well.

Add a little water, sugar and stir to combine into the curry.

Add all the vegetables one by one: baby corn, broccoli, cauliflower, thai eggplant, green zucchini and mix it well.

Stir and allow the curry to thicken a little and come to a boil.

Add basil leaves, red chilli. Stir the mixture, give it a light boil.

Serve hot thai curry with steamed rice or jasmine rice.
