Heat 2 tablespoons of olive oil in a large skillet over medium heat.
Add 1 chopped onion and sauté until translucent, about 5 minutes.
Add 500 grams of minced beef to the skillet and cook until browned, about 7-10 minutes.
Season the beef mixture with salt and pepper to taste, and stir in a handful of chopped parsley; set aside to cool.
Preheat the oven to 190°C (375°F).
Lay out a sheet of phyllo pastry and brush it with melted butter.
Place another sheet on top and brush it again with butter.
Spoon a line of the beef filling along one edge of the pastry.
Roll the pastry tightly around the filling to form a log shape.
Place the rolled burek on a baking sheet lined with parchment paper.
Brush the top with a beaten egg.
Bake in the preheated oven for 30-35 minutes or until golden brown.
