1

Preheat the oven to 150°C (fan oven).

2

Peel, core, and slice 2 medium dessert apples, then soak them in water and lemon juice to prevent browning.

3

In a mixing bowl, combine 125 grams of melted butter and 140 grams of light brown sugar, mixing on a slow speed until incorporated.

4

Add 3 eggs (preferably at room temperature) to the mixture and blend until smooth and creamy, until it becomes pale and fluffy.

5

Gradually add 225 grams of plain flour, 2 teaspoons of baking powder, and 0.5 teaspoon of salt to the mixture, mixing on a slow speed to avoid flour spillage.

6

Slowly incorporate 5 tablespoons of whole full fat milk into the mixture until a nice smooth batter forms.

7

Transfer the batter into a greased 10-inch spring-loaded cake tin.

8

Layer the sliced apples on top of the batter, slightly overlapping them, starting from the outside and swirling inward.

9

Sprinkle a mixture of 2 tablespoons of dark brown demerara sugar and 0.5 teaspoon of cinnamon over the apples.

10

Bake the cake in the preheated oven for about 35 minutes, checking at 15 minutes to rotate for even baking.

11

In a small saucepan, combine 50 ml of water, a dessert spoon of dark demerara sugar, and 2 heaped teaspoons of Seville orange marmalade, bringing it to a boil and then simmering until it becomes a syrupy glaze.

12

Once the cake is baked, brush the warm cake with the orange marmalade glaze for a nice sheen.

13

Allow the cake to cool for about an hour before releasing it from the springform pan.
