How to Make Cauliflower Hummus That Tastes Like the Real Thing!

Cut one head of cauliflower into florets.

Place the cauliflower florets on a baking sheet.

Drizzle the cauliflower with 1-2 tablespoons of avocado oil to coat.

Add 4 garlic cloves to the baking sheet with the cauliflower.

Roast in a 400 degree oven for 15 to 20 minutes until cooked through.

Remove the cauliflower from the oven and let it cool slightly.

Transfer the cooled cauliflower to a food processor.

Add 1/4 teaspoon black pepper, 1/4 teaspoon ground cumin, 1/2 teaspoon salt, and 3/4 teaspoon Italian seasoning to the food processor.

Add the juice of 1 lemon and 1/4 cup tahini to the food processor.

Add 2-3 tablespoons of avocado oil to the mixture.

Blend the ingredients in the food processor until combined, checking the consistency.

If the mixture is too thick, add water, starting with 2 tablespoons, and blend again.

Scrape down the sides of the food processor as needed during blending.

After blending, a total of 6 tablespoons of water and an additional tablespoon of oil may be added to achieve desired consistency.

Serve the hummus in a bowl, drizzling olive oil on top and sprinkling with paprika.
