Vegan Quiche

150g gluten-free flour mix (65g buckwheat, 65g rice flour, 20g tapioka starch)
30g oil of your choice
a pinch of salt
2 tbsp flaxseeds
6 tbsp water
50g vegan cheese
100g chickpea flour
1 zucchini
some tomatoes
salt
spices of your choice
approximately 120ml water

Add water to the flaxseeds and set it aside for 5 minutes.

For the crust, add all ingredients to a bowl and make a dough.

Press the dough into a tart/pie pan up the sides.

Optional: pre-bake for 10 minutes at 180°C.

Put vegan cheese onto the crust, then add zucchini, spices, and chickpea batter (chickpea flour with salt and spices mixed with water).

Top with tomatoes.

Bake for 25 minutes if the crust is pre-baked, or 35 minutes if not, at 180°C.
