Pour in white wine and scrape up any browned bits from the pan, cooking until reduced by half.
Add beef broth, thyme, bay leaves, salt, and pepper; simmer for 5 minutes.
Season pork chops with salt and pepper on both sides.
In another skillet, heat olive oil over medium-high heat and sear pork chops for 3-4 minutes per side until browned.
Transfer pork chops to a baking dish and top with caramelized onion mixture.
Sprinkle cheese on top and bake in a preheated oven at 375°F for 15-20 minutes until pork is cooked through and cheese is bubbly.
Garnish with fresh parsley before serving.
