Whole wheat dough adds fiber and nutrients.
Combine warm water, yeast, and salt in a large bowl and mix until dissolved.
Add white bread flour and mix to form a dough, folding in olive oil after mixing.
Wet hands and fold the dough in the bowl, then roll it in oil and cover it to chill in the fridge for 30 minutes.
After 30 minutes, remove the dough and perform a coil fold, then return to the fridge for another 30 minutes.
Repeat the folding process after the second 30 minutes, then divide the dough into four equal pieces and shape into balls.
Place the dough balls in a greased tray, cover, and let proof in the fridge for 12 to 24 hours.
On baking day, preheat the oven to 250°C (480°F).
Slice onions and leek thinly for caramelization.
In a pot, heat olive oil and add onions and leek, cooking on medium heat for 30 minutes until browned, adding salt and water as needed to prevent sticking.
Remove caramelized onions and set aside.
Stretch one piece of dough to fit the bottom of a greased tray, layer with caramelized onions and a mix of mozzarella and cheddar cheese, then cover with another stretched piece of dough.
Drizzle olive oil on top and sprinkle with more cheese before baking.
Bake for about 20 minutes at 220°C (430°F) until golden brown.
