Sticky Rice

Add the sticky rice to a bowl and fill it with water. Soak it for 6 hours or up to overnight, ensuring the water level is at least 3 inches above the rice.

Drain the soaked rice and rinse it repeatedly to wash off excess starch.

Wet the cheesecloth to prevent the rice from sticking to it, then line the steamer with the cheesecloth.

Evenly arrange the soaked rice on the steamer lined with cheesecloth.

Place the steamer over high heat. Tie pandan leaves into a knot and drop them into the boiling water to infuse flavor into the rice. Bring to a simmer and cover to steam for 15 minutes.

After 15 minutes, turn off the heat and remove the lid of the steamer.

Add a cup of water to the rice and use a rice paddle to flip the rice. Cover and continue steaming for another 20 minutes to ensure even cooking.

Remove from heat and let it cool for a few minutes. Use the rice paddle to mix the rice and break up any lumps. Transfer to a rattan basket or insulated container to maintain heat until ready to serve.
