Preheat the oven to 180°C (356°F).
Grease a cake pan with butter and line the bottom with parchment paper.
In a bowl, whip together butter and sugar.
Add vanilla extract, salt, and lemon extract, and whip until fully combined.
Add eggs one at a time, mixing for 30 seconds after each addition.
Sift in flour and baking powder, then add milk and mix until fully combined.
Peel and dice 2 apples into 2cm squares, then gently fold them into the batter before pouring it into the cake pan.
Decorate the top with the remaining apple slices and bake for 45 minutes.
Warm the apricot jam in the microwave or in a pan before the cake is fully baked.
Once baked, let the cake cool for 5 minutes before removing it from the pan onto a wire rack.
Spread the top of the cake with the apricot jam and let it cool before serving with whipped cream or vanilla ice cream.
