Preheat your oven to 350°F.

In a large mixing bowl, combine the entire box of ube mochi pancake mix with the eggs, melted butter, milk, water, sugar, and ube flavoring (if using). Whisk everything together until the batter is completely smooth.

Pour the mixture into an 8x8 inch baking pan that’s been lined with parchment paper.

Bake for about 70 minutes, or until the top and edges turn a nice golden brown.

Let it cool to room temperature before slicing into squares.
