1 cup diced onion
1 cup diced bell pepper
1 teaspoon salt, plus more to taste
2 cups sliced zucchini
6 cloves garlic, minced
1 tablespoon ground cumin
3 tablespoons chili powder
1 (14oz) can fire roasted diced tomatoes
1 (14oz) can kidney beans, drained
2 tablespoons tomato paste
2+ cups vegetable broth or water
1 cup red lentils
1 teaspoon sugar
1 teaspoon salt, plus more to taste

Heat the oil in a large pot over medium heat.

Add the diced onion and bell pepper, and sauté until softened.

Stir in the salt, zucchini, and minced garlic, cooking until fragrant.

Add the ground cumin and chili powder, stirring to combine.

Pour in the fire roasted diced tomatoes, kidney beans, tomato paste, and vegetable broth or water.

Add the red lentils and sugar, mixing well.

Bring the mixture to a boil, then reduce heat and simmer until lentils are cooked through, about 20-30 minutes.
