Instructions
- 1Peel the green plantains and cut them into 1-inch thick slices.
- 2Heat cooking oil in a deep skillet over medium heat until shimmering.
- 3Fry the plantain slices for 3-4 minutes until golden brown on one side.
- 4Remove the fried plantains and drain on paper towels.
- 5Flatten each fried plantain slice using a flat surface or the bottom of a plate.
- 6Return the flattened plantains to the hot oil and fry for another 2-3 minutes until crispy and golden.
- 7Remove from oil and drain again on paper towels.
- 8Sprinkle with salt, garlic powder, black pepper, and onion powder while hot.
- 9Drizzle with lime juice and garnish with fresh coriander if desired.
- 10Serve warm as a side dish or snack.

- ●2 tbsp olive oil
- ●1 onion, chopped
- ●3 cloves garlic, minced
- ●1 tsp fresh thyme
- ●1 tsp dried oregano
- ●1 tsp paprika
- ●1/2 tsp cayenne pepper
- ●1/2 tsp black pepper
- ●1 tsp salt
- ●1/2 cup chicken broth
- ●1 lime, juiced
- ●2 green onions, chopped
Instructions
- 1Preheat the oven to 375°F (190°C).
- 2In a large bowl, combine olive oil, chopped onion, minced garlic, thyme, oregano, paprika, cayenne pepper, black pepper, and salt.
- 3Add the chicken or turkey thighs to the bowl and coat them well with the marinade. Let it sit for at least 30 minutes.
- 4Place the marinated chicken or turkey in a baking dish.
- 5Pour the chicken broth and lime juice over the meat in the baking dish.
- 6Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
- 7Remove the foil and bake for an additional 15-20 minutes, or until the meat is cooked through and has a nice golden color.
- 8Baste the meat with the juices halfway through the uncovered baking time for extra flavor.
- 9Once done, remove from the oven and let it rest for 5 minutes before serving.
- 10Garnish with chopped green onions before serving.
