Ingredients

Instructions

  1. 1Peel the green plantains and cut them into 1-inch thick slices.
  2. 2Heat cooking oil in a deep skillet over medium heat until shimmering.
  3. 3Fry the plantain slices for 3-4 minutes until golden brown on one side.
  4. 4Remove the fried plantains and drain on paper towels.
  5. 5Flatten each fried plantain slice using a flat surface or the bottom of a plate.
  6. 6Return the flattened plantains to the hot oil and fry for another 2-3 minutes until crispy and golden.
  7. 7Remove from oil and drain again on paper towels.
  8. 8Sprinkle with salt, garlic powder, black pepper, and onion powder while hot.

  • 4 chicken thighs (or turkey thighs)
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp fresh thyme
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1/2 tsp black pepper
  • 1 tsp salt
  • 1/2 cup chicken broth
  • 1 lime, juiced
  • 2 green onions, chopped

Instructions

  1. 1Preheat the oven to 375°F (190°C).
  2. 2In a large bowl, combine olive oil, chopped onion, minced garlic, thyme, oregano, paprika, cayenne pepper, black pepper, and salt.
  3. 3Add the chicken or turkey thighs to the bowl and coat them well with the marinade. Let it sit for at least 30 minutes.
  4. 4Place the marinated chicken or turkey in a baking dish.
  5. 5Pour the chicken broth and lime juice over the meat in the baking dish.
  6. 6Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
  7. 7Remove the foil and bake for an additional 15-20 minutes, or until the meat is cooked through and has a nice golden color.
