Start by making the pizza dough.
Combine 3 cups of flour, 1 teaspoon of salt, 2 teaspoons of sugar, and 1 and 1/4 teaspoons of active yeast in a mixer bowl.
Add 1 cup of warm water and 2 tablespoons of olive oil to the dry ingredients.
Mix on low speed with a dough hook for about 4 minutes.
Remove the dough from the mixer and fold it over on itself a few times.
Place the dough in a bowl with a tiny amount of olive oil, drizzle more oil on top, and cover with plastic wrap.
Refrigerate the dough for at least 2 hours or overnight.
After resting, remove the dough from the fridge and let it come to room temperature.
Prepare the no-cook pizza sauce by mixing 1 can of tomatoes, 135 g of tomato paste, 1 teaspoon of oregano, 1 teaspoon of black pepper, 1 teaspoon of salt, and 2 tablespoons of olive oil in a bowl.
Roughly chop the tomatoes by hand and mix all the ingredients together until combined.
Divide the dough in half and flour the surface for rolling.
Roll out one half of the dough to your desired thickness, or push it out by hand.
For the mushroom pizza, spread a layer of sauce over the dough.
Sprinkle grated mozzarella cheese over the sauce.
Add sliced fresh mushrooms on top of the cheese.
Sprinkle a little oregano on top and add whole olives.
Place the pizza in a preheated oven and bake for 8 minutes.
Remove the pizza from the oven and serve.
