Turkey ham is lower in fat than pork ham.
Add sugar and yeast to warm water and mix to activate.
Once activated, add the yeast mixture to a stand mixer bowl.
Add olive oil, flour, and salt to the bowl.
Use a dough hook to mix on speed two until combined, then knead for 10 minutes.
Grease a medium-sized bowl with oil and set aside.
After 10 minutes, turn the dough out onto a bench and knead briefly.
Form the dough into a ball and place it in the greased bowl, coating it with oil.
Cover the bowl and let it proof for 1 hour.
After proofing, turn the risen dough onto the bench and knock back the dough to release gas.
Divide the dough into six pieces, approximately 118g each.
Form each piece into a ball and place them in a greased storage box, dusting lightly with flour.
Take one dough ball out and place it on a lightly floured surface, covering it with a lightweight dry cloth to proof for 15 minutes.
After proofing, manipulate the dough into a circle, letting it rest if it tightens up.
Coat the air fryer tray with oil and place the dough on it, stretching it to fit the tray.
Bake the base in the air fryer at 190°C (375°F) for 5 minutes.
Remove the base from the air fryer and flip it over.
Spread pizza sauce over the base, followed by grated mozzarella cheese and pepperoni slices.
Add a little more cheese on top of the pepperoni.
Place the pizza back into the air fryer and cook at 190°C (375°F) for 5 minutes, adding 2 minutes if cooking from frozen.
Transfer the cooked pizza to a serving plate and let it cool for a few minutes before slicing.
