In a bowl, combine 3 cups of all-purpose flour and 3/4 teaspoon of salt; mix with hands.

Add 2 tablespoons of melted butter and 1 tablespoon of shortening; crumble together.

Slowly add 1 cup and 1/3 warm water until the flour is hydrated.

Knead the dough for 5 minutes until it no longer sticks to hands.

Divide the dough into 8 large balls, rub with butter, cover with plastic wrap, and let rest for 20 minutes.

Roll out the dough into burrito-sized tortillas.

Heat a kumal and blister the tortillas for about 30 seconds on each side; keep covered in a kitchen towel.

In a skillet, heat oil on high and add 1 and 1/2 pounds of flank steak cut into strips; season with salt and black pepper.

Cook steak for about 2 minutes on each side.

Add 6 small potatoes seasoned with garlic salt, 1 small red bell pepper, 1 small onion, and 2 roasted poblano peppers; cook for about 5 minutes until potatoes are almost done.

Spread refried beans on a tortilla, add the steak and egg mixture, and cheese; roll into a burrito.
