Start by making cilantro lime rice. Heat a tablespoon of oil in a big pot over low heat.

Add 1/2 of an onion, 1/2 of a jalapeno, and about a teaspoon of salt. Cook the onions until soft, about 15-20 minutes.

Add 1 clove of garlic and cook for about 30 seconds.

Add 8 cups of water to the pot and bring to a boil.

Once boiling, add 4 cups of long grain rice and stir. Cover and reduce heat to low, simmering for 20 minutes.

After 20 minutes, add the juice of 4 limes, lime zest, and chopped cilantro to the rice and let sit for 10 minutes.

For the beans, use the other half of the onion, 1 clove of garlic, 1/2 of a jalapeno, 4 cans of beans, and 2 cans of diced green chilies.

In a separate frying pan, heat a tablespoon of oil and add the remaining onion, jalapeno, and about 1/2 teaspoon of salt. Cook for 15-20 minutes on low, stirring occasionally.

Once the onions are soft, add the garlic and cook for about 30 seconds before adding the beans and green chilies. Bring to temperature and let simmer.

Grill 1 1/2 pounds of carne asada on the grill until cooked, then let rest for about 10 minutes before chopping into pieces.

Heat up tortillas over an open flame until warm.

Assemble the burritos: add cilantro lime rice, beans, carne asada, shredded cheese, and avocado to the tortilla.

Roll the tortilla tightly to form a burrito.

For a bowl, add a bed of shredded lettuce and top with rice, beans, carne asada, cheese, sour cream, guacamole, and salsa.
