Welcome to the kitchen and introduction to the recipe for Mississippi pot roast.
Show the ingredients: 3-pound chuck roast, stick of butter, ranch packet, aju gravy packet, 2 onions, head of garlic, rosemary, thyme, and pepperoncini.
Season the chuck roast with all-purpose seasoning, ensuring to be generous and cover all sides. Let it sit for at least 30 minutes.
Quarter the onions and chop the garlic to create a bed for the roast in the Dutch oven.
Preheat the oven to 325°F and add 2 tablespoons of avocado oil to the Dutch oven.
Sear the seasoned roast in the Dutch oven for 3-4 minutes on each side until a deep brown crust forms.
Add the stick of butter to the Dutch oven and let it melt, then add the onions and garlic to soften.
Add fresh rosemary and thyme, a few pepperoncini, and 1/2 cup of pepperoncini juice to the pot.
Return the roast to the Dutch oven and add 3 cups of chicken broth until it reaches the shoulders of the roast.
Sprinkle in the ranch and aju gravy packets, cover with the lid, and place in the oven at 325°F until fork tender (about 3 hours).
Optionally, mention that it can also be cooked in a pressure cooker for about an hour or in a slow cooker for 4-6 hours after searing.
After cooking, check the roast for tenderness and shred it with a fork.
To thicken the sauce, take some liquid from the Dutch oven and bring it to a simmer.
Prepare a slurry with equal parts cornstarch and cold water, then add it to the simmering liquid to thicken the gravy.
Plate the pot roast over mashed potatoes, add gravy, and garnish with pepperoncini.
