2 sheets of gelatine or 6g of powdered gelatine
200g of double cream
200g of Greek yoghurt
3 tbsp of condensed milk
20g of icing sugar

Soak the gelatine in cold water (sheets) or 30ml cold water (powdered) to hydrate.

Grate one orange zest. Juice all the oranges and grapefruit, and set aside.

Heat half of the juice and dissolve the gelatine, then combine with the rest of the juice.

Gradually stir juice into the cream mixture.
