Coconut Rice Pudding

1 cup jasmine rice
1 can (13.5 oz) coconut milk
2 cups water
1/2 cup sugar
1/4 tsp salt
1 tsp vanilla extract
1/2 tsp ground cinnamon
1/4 cup shredded coconut (optional)

In a medium saucepan, combine the rinsed rice, coconut milk, water, sugar, and salt.

Once boiling, reduce the heat to low, cover the saucepan, and simmer for about 20 minutes or until the rice is tender and the liquid is absorbed.
