Coconut Rice Pudding

1 cup jasmine rice
2 cups water
1 can (about 14 oz) full fat coconut milk
1/2 cup sugar
1 teaspoon ground turmeric
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cardamom
a pinch of salt
toasted coconut flakes (optional)
sliced mango (optional)
honey (optional)

Rinse the rice until the water runs clear.

In a medium saucepan, combine the rinsed rice and water.

Bring to a boil over high heat, then reduce to low, cover, and simmer for about 15 minutes or until the water is absorbed.

Once the rice is cooked, add the coconut milk, sugar, turmeric, cinnamon, cardamom, and salt.

Stir until combined and bring the mixture to a simmer over medium heat, stirring frequently.

Let the pudding simmer for about 20 to 25 minutes, stirring occasionally to prevent sticking.

Taste as you go and adjust sweetness or spice as desired.

Once the pudding reaches your desired consistency, remove it from the heat and let it cool slightly.

Add optional toppings like toasted coconut flakes and sliced mango, and drizzle with honey if desired.
