Shine Muscat Glutinous Rice Cake

30 Shine Muscat (70~75g each)
180g Red Bean Paste (30g each)
400g Wet-milled Glutinous Rice Flour
30g Water
30g Sugar
1 Tbsp Sugar (for scattering on wet cloth)

Wash the Shine Muscat thoroughly and dry with a kitchen towel, then group them into 6 bunches of 5.

Place 30g of red bean paste between each Shine Muscat and form them into a single piece. Cover with plastic wrap and refrigerate to keep moist.

Sift the wet-milled glutinous rice flour into a bowl, then add water. Mix roughly with chopsticks, then knead with your hands to break up any lumps.

In a steamer, place a wet cloth and sprinkle sugar evenly on top to prevent the dough from sticking. Lightly shape the glutinous rice flour mixture and place it in the steamer, leaving space for steam to circulate. Cover and steam on high for 20 minutes.

Once the dough turns translucent, it's done. Transfer the cooked dough to an oiled bowl, mix in sugar, and knead for about 5 minutes until smooth (be careful as it's very hot!).

Divide the dough into 6 pieces, flatten each piece with oiled hands, place the Shine Muscat and red bean paste inside, and seal. Dust with starch and let them rest until set.
