Add the bloomed yeast to the mixing bowl and knead the dough for 5 to 10 minutes until smooth, using a stand mixer (KitchenAid) or by hand.

Knead the dough by hand until it forms a nice dough ball without needing to flour the surface.

Cover the dough to prevent it from drying out and let it proof for 30 to 45 minutes until risen.

Shape the donuts by dividing the dough into 50 g pieces, rolling them into balls, and flattening slightly before placing them on a lined baking tray.

Let the shaped donuts proof for another 30 to 45 minutes, pressing them down slightly before proofing.

Heat neutral oil (canola or sunflower) in a small pot, adding about 2 inches of oil and heating it to 160°C to 170°C.
